Asian Style Chicken

⏰ 55 minutes
🍽 5-6 chicken fillets or 9 chicken pieces


3 large spring onions chopped (2 for the base and 1 for garnish)
3 small robot peppers ( its to create a color variation, but if not available any color can be used)
2 tbsp olive oil to seal chicken
5-6 chicken fillets or a 9 pack of drumsticks and thighs

For the marinade:

1 lime’s juice freshly squeezed
4 tbsp soya sauce
2 tbsp raw honey
2 tbsp olive oil
1/2 tsp fresh minced garlic
1 heaped tbs sesame seeds
1/2 tsp salt
1/2 tsp pepper
1/2 tsp fresh ginger (optional)
A handful of freshly chopped coriander

Fresh coriander and chopped spring onion for garnish


Preheat oven 200’C
Prep baking dish with non-stick spray
Dice spring onion and pepper and place in baking dish to create a base
Seal chicken with olive oil
Place on top of base of peppers
Pour about a 1/4 cup of hot water around the chicken
Mix the marinade in a small bowl and pour over chicken
Cover with foil and bake for 30minutes
Remove foil for another 15minutes while occasionally pouring the sauce over the chicken pieces

Remove from the oven- garnish with freshly chopped coriander and spring onion and serve with side of choice…
