Frittata Loaf

⏰ 45 minutes
🍽 1 Medium sized loaf


‣1ts Olive oil
‣1 Red onion diced
‣2 cloves Fresh garlic diced (you can use more if preferred)
‣10g Fresh parsley
‣2 Portobello mushrooms cut up in small pieces
‣50g-80g Sundried tomato
‣100g Spinach
‣300g Broccoli
‣8 Eggs
‣1g Paprika
‣2g Sesame seeds
‣1g Salt
‣1tbs Raw honey


‣Pre heat oven to 200’C
‣Prepare a medium size frying pan with non-stick spray, this always help for cleaning the pan afterwards
‣Over medium heat, fry the onion, garlic, and mushroom till golden brown in a bit of olive oil
‣Place the bag of broccoli in the microwave after cutting off one of the corners, microwave for 5min to steam soft. ‣When done, add to the frying pan with the onion mix ( cut up large pieces into smaller ones)
‣Add the sundried tomato, salt, raw honey and fresh parsley.
‣Remove from the heat and allow to cool slightly.
‣In a large mixing bowl beat the eggs till completely fluffy.
‣Prepare a loaf pan with non stick spray
‣Pour a bit of the egg into the pan, and place in the oven for about 2min just so it forms a base.
‣Scrape the broccoli mix into the loaf pan, and pour over the rest of the egg, stir slightly to ensure even distribution of the egg
‣Finish off with onion rings and sesame seeds on top before placing in the oven.
‣After 15min remove from the oven, sprinkle with paprika and drizzle with honey. Place back into the oven for about 5minutes or till golden brown on top.

Serve warm, or is ideal for a lunchbox.

All of the ingredients used in this recipe has anti-inflammatory properties
