Grilled Portobello’s with Biltong and Sun-Dried Tomato

A quick and easy recipe ideal for a starter or as a side when you’re having a braai

⏰ 25 Minutes
🍽 4 Mushrooms

Ingredients:

4 large portobello mushrooms
4tsp Olive oil
2g Ground black pepper
2g dried parsley
150g Biltong
120g Sun-dried tomatoes
1 small red salad onion chopped

For the crumbs:

1 heaped tbsp almond flour
1/2 tsp fresh minced garlic
1 heaped tsp Sesame seeds
1g salt

For the sauce:

1 tbsp honey
1 tbsp soya sauce
Freshly chopped Italian parsley for garnish

Instructions:

Preheat oven to 200’C
Prepare baking tray with non-stick spray
Place mushrooms on baking tray,
Drizzle each one with 1ts of olive oil
Top with biltong and then with sundried tomato,
Mix the almond flour, salt, garlic and sesame seeds together with fingertips till a crumb-like texture is formed
Sprinkle on top of every mushroom.
Finish off with chopped red onion, dried parsley and black pepper
Bake for 15 minutes
Remove from the oven and put oven on grill
Mix the honey and the soya sauce in a cup and drizzle over each mushroom
Place back in the oven and grill for 5minutes

Garnish with freshly chopped Italian parsley and enjoy!
