Healthy Chicken Pie

Healthy hearty chicken pie? Yes please!

For the crust:
‣280ml egg whites
‣1 heaped table spoon ground flax seeds
‣1 heaped table spoon almond flour
‣1g salt
 ‣1 egg beaten to make an egg wash
Chicken filling:
‣Olive oil
‣1 medium red salad onion
‣1/2 cup Frozen peas defrosted in boiling water
‣1/2 cup
‣Carrots steamed and diced
‣4 chicken breast (1 breast per pie) cut into small pieces
‣100ml unsweetened almond milk
‣2g salt
‣1g ground black pepper
‣1t dried thyme
‣1g paprika
‣Fresh thyme, sesame seeds and small salad onion for  garnish
‣Preheat oven on 200’C
For the filling:
‣In a medium size pan, fry the onion and chicken in a drizzle of olive oil.
‣Once the chicken is cooked, add the defrosted peas and diced steamed carrots, almond milk, salt, black pepper and thyme.
‣Let it simmer till most of the almond milk is evaporated.
‣Remove from the heat and set aside
For the crust:
‣Place all ingredients in a shaker with a whisk ball and shake well for 60seconds
‣Prepare crepe pan with non stick spray
‣Preheat over medium heat
‣Pour batter in the pan, use 1/4 of the mix for 1 pancake.
‣Shake well every time before pouring batter into the pan to avoid uneven texture
To make the pies:
‣Prepare an oven tray or baking tray with non-stick spray, you will make the pies in the tray to just place into the oven afterwards
‣Scoop about 3-4 heaped table spoons of filling on the one side of the pancake, fold over and brush with the whisked egg. To make the 2 sides of the pancake stick together to close up the pie, brush the sides on the inside with the egg as well and press together to seal.
‣Bake for 10-15minutes, remove from the oven, drizzle with olive oil and honey, and sprinkle with sesame seeds and place back in the oven for another 5minutes. This is to crisp up the crust
