Meatballs with smoked paprika tomato relish

🍽 24 Meatballs

Ingredients for meatballs:

‣1kg extra lean mince
‣1 medium red onion
‣15g freshly chopped parsley
‣1ts salt
‣1 heaped tbs smoked paprika (can be replaced with plain paprika)

Ingredients for Healthy Tomato relish:

‣Drizzle of olive oil
‣1 red salad onion diced
‣200g rosa tomatoes cut in halves
‣1tbs of raw honey
‣2g salt
‣1ts paprika
‣2g harissa spice
‣150ml broth drained from the meatballs


‣Pre heat oven to 200’C
‣Prepare a baking tray with non-stick spray
‣Mix the mince, onion, chopped parsley, salt and paprika well and form meatballs with about a hand-full of mince each, once cooked the meatballs should be roughly 50g in size
‣Place in the oven pan.
‣Drizzle with olive oil, and add 200ml of hot water, cover with foil and bake for 25min
‣Remove from the oven,
‣Drain the excess water for seperate use
sprinkle with paprika and drizzle with raw honey, place back into the oven for another 5minutes or until the meatballs is golden brown in color

For the tomato relish:

‣Prepare a medium size frying pan with olive oil over medium heat
‣Fry the onions till golden brown, add the rosa tomatoes and let simmer till the tomatoes are soft.
‣Add the raw honey, salt, paprika, harissa spice  and 150ml broth and let simmer for another 5-10minutes or till the honey start caramelizing on the sides and on the bottom of the pan and most of the moisture has evaporated,

‣Dish the sauce over the meatballs and serve warm and enjoy!
